I personally use tag&rename, and really think it's the quickest/best/easiest way to do the job.

which sofware do you use to tag your mp3. I'm curious

I aways come back to mp3tag, especially cause I like its coversupport. As 90% of my music is home-ripped CD's all tags & filenames are pretty consistant and I use tagging software mostly to manage the art.

I use MediaMonkey because, like SilverEagle, everything that I have is in the form of complete albums. MediaMonkey has a feature called AutoTag where it uses Amazon.com's catalog to auto-tag the files and add coverart. It works well for me.

Like SilverEagle and Dubious I'm ripping mainly complete CD's, and for tagging I use also Tag&Rename as it is able to auto-tag based on the information coming from Amazon (.com, .co.uk, .de, .fr, .ca and .co.jp), and also from Freedb.
Beside adding the tags & the cover art I also rename the files like this:
"Artistname - CD name - track nr - title.mp3"

Which leads another interesting question: how do you all organize your tracks?

My tracks are named <tracknumber>-<trackname>.<ext>, where tracknumber is zeropadded if needed to make all tracks for an album line up. <ext> is mainly MP3.

Music is stored in four subdirectories:
..\pop\<artist>\<album>\
..\classic\<artist>\<album>\
..\cabaret\<artist>\<album>\
..\children\<artist>\<album>\

The reason using these subdirs and not genres is that I never mix listening pop/classical/cabaret (and would certainly never shuffle over them), and children is not for me . By for instance filtering on url contains '/pop/' I can be 100% sure I get all pop tracks without being dependant on tags.
