No, the sorting has nothing to do with the selected album cover art.
The album cover art comes from the ID3-tag and/or from image files placed in the same directories as the music files. If there are several possible covers, the "correct" cover is selected by the keywords at "My music library / Combine tracks to albums".
Only if you disable ID3-tag reading completely (see "My music library / Options"), obviously no images are read from the ID3-tags.
Maybe these explanations could make some things clearer.
